  • Base Pizza

  • Zucchini

  • Eggplant

  • Red bell pepper

  • Mozzarella

  • Pureed tomato pulp (optional)

  • Extra Virgin Olive Oil

Cut the eggplant into thin slices and the zucchini into rounds and grill them on a hot cast-iron griddle. Then cut the bell bell pepper into strips, after removing the filaments and seeds, spread the tomato puree (optional), grilled vegetables, and on top the mozzarella cut into small cubes. Add a drizzle of oil. Bake in a hot oven for about 5-8 minutes at 200°C or 250°C for a softer pizza.

As an alternative to the oven, a well-warmed nonstick skillet with a lid can be used, with cooking times as desired.
